My ANZAC biscuits

ANZAC Day is just around the corner and we can't wait to bake our take on this classic Aussie treat – the ANZAC Biscuit.

Here's what you'll need:

  • 120g butter (cut into pieces)

  • 100g golden syrup

  • 1tsp bicarbonate of soda

  • 100g rolled oats

  • 150g plain flour

  • 70g light brown sugar

  • 50g desiccated coconut

Method:

  1. Preheat over to 160°C. Line 2 baking trays with baking paper.

  2. Add the butter and golden syrup into a saucepan and melt over a medium/low heat.

  3. Add bicarbonate of soda and stir to mix.
     

  4. Add rolled oats, flour, brown sugar and coconut and mix gently, but thoroughly.

  5. Roll into golf ball sized balls, place on tray then flatten slightly. Allow sufficient space between for spreading while cooking.

  6. Bake for 8 to 10 minutes until golden brown. Remove from oven, allow to cool on tray for 5 minutes then transfer to a wire rack to cool.
